Ingredients
- 1 head of cauliflower
- 1 cucumber
- ½ to 1 whole avocado
- 1-2 Tbsp of soy sauce
- 5-6 oz of imitation crab
- Sesame seeds
- 4 oz of cream cheese
- 1-2 Tbsp of rice vinegar
- 5 sheets of Nori
Directions
- Pulse cauliflower in a food processor to make rice-sized pieces.
- Sauté cauliflower in a saucepan with a tablespoon or 2 of soy sauce to taste until softened.
- Place in a bowl and sprinkle a tablespoon or two of rice vinegar to taste.
- Mix in 4 oz of cream cheese to start, add in another oz or two if needed to bind cauliflower rice together.
- Cool in fridge.
- Place saran wrap down to make clean up easier, then a sheet of Nori on a sushi roll mat, place thin slice of cucumber, avocado, imitation crab meat and sprinkle sesame seeds over the cauliflower rice then roll-up.
- Wrap tightly in saran wrap and put in the fridge until you’re ready to enjoy with some soy sauce.
