• 1 head of cauliflower
  • 1 cucumber
  • ½ to 1 whole avocado
  • 1-2 Tbsp of soy sauce
  • 5-6 oz of imitation crab
  • Sesame seeds
  • 4 oz of cream cheese
  • 1-2 Tbsp of rice vinegar
  • 5 sheets of Nori


  1. Pulse cauliflower in a food processor to make rice-sized pieces.
  2. Sauté cauliflower in a saucepan with a tablespoon or 2 of soy sauce to taste until softened.
  3. Place in a bowl and sprinkle a tablespoon or two of rice vinegar to taste.
  4. Mix in 4 oz of cream cheese to start, add in another oz or two if needed to bind cauliflower rice together.
  5. Cool in fridge.
  6. Place saran wrap down to make clean up easier, then a sheet of Nori on a sushi roll mat, place thin slice of cucumber, avocado, imitation crab meat and sprinkle sesame seeds over the cauliflower rice then roll-up.
  7. Wrap tightly in saran wrap and put in the fridge until you’re ready to enjoy with some soy sauce.
