Oh hi Fritatta! Get in my belly! This was dinner last night. Below is the recipe in case you have never made one before.

Calories: 182 | Fat: 13g | Protein: 15g | Carbs: 2g

Makes 8 wedges. Serving size is 2 wedges.


  • 6 large eggs
  • 1 cup fresh spinach (baby leaves chopped)
  • 2 Tbsp uncooked scallions finely chopped
  • 1/4 tsp salt to taste
  • 1/8 tsp black pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp green pepper
  • 1/4 cup bacon bits (or chopped bacon)


  1.  Preheat oven to 400 degrees
  2. In a large bowl, beat eggs; stir in all ingredients EXCEPT cheese.
  3.  Coat a 12 in ovenproof nonstick skillet with cooking spray; heat skillet over medium heat. Pour in mixture and cook until partially set (about 5 min.)
  4. Sprinkle cheese over eggs. Place skillet in oven and bake until cheese softens and eggs firm up (about 5 minutes.) Remove from oven and let stand for 1 minute. Cut into 8 wedges.
