Makes 8 wedges. Serving size is 2 wedges.
Ingredients
- 6 large eggs
- 1 cup fresh spinach (baby leaves chopped)
- 2 Tbsp uncooked scallions finely chopped
- 1/4 tsp salt to taste
- 1/8 tsp black pepper to taste
- 1/2 cup shredded cheddar cheese
- 2 tbsp green pepper
- 1/4 cup bacon bits (or chopped bacon)
Directions
- Preheat oven to 400 degrees
- In a large bowl, beat eggs; stir in all ingredients EXCEPT cheese.
- Coat a 12 in ovenproof nonstick skillet with cooking spray; heat skillet over medium heat. Pour in mixture and cook until partially set (about 5 min.)
- Sprinkle cheese over eggs. Place skillet in oven and bake until cheese softens and eggs firm up (about 5 minutes.) Remove from oven and let stand for 1 minute. Cut into 8 wedges.
